State Fair entry

For the state fair this summer I decided to enter a cupcake. They had a variety of submission sections and this year I went with a vegetable cupcake. I wanted something original that would stand out so I went with avocado. I worked to adapt a recipe so that it would incorporate avocado. Unfortunately I did not try baking these until the night before the fair. The cupcake was not impressive. It came out dry and the avocado taste didn't shine through the way I hoped it would. The icing though, was perfect! It was a smooth butter cream with a hint of avocado. I wanted to lick the icing off and toss all the cupcakes into the trash. Luckily for me I never had to enter my cupcakes because the hurricane-like weather we had was enough to cancel the fair indefinitely. Next year I will plan a little more ahead. I think these cupcakes could be a hit with the proper adaptations.
